Vegan Ventures | Except for the Chocolate Chips
Whenever our friend Deb, mother of four grown children, babysits for us she has a Mary Poppins effect on our home. We come in the door and the debris from the day is gone. Every thing is put away or stacked in neat piles in unobtrusive places. I could have even sworn this last time the cupboards were sparkling bright and clean. I love her. With many of our wonderful babysitters, including family, I invite them to come and live with us, forever.
My ability to keep our house ordered needs some improvement but in the mean time I’ve been honing my baking skills. As I mentioned previously we were spending a lot of money making coffee runs and buying baked goods from the store. What a money suck! Thanks to the WWW there are great recipes out there and I’ve been narrowing them down to the best; like this coconut banana bread. It’s a vegan recipe unless you’re like me and add milk chocolate chips. Ohhh yeaaaah…
It is so delicious. The only changes I made were I used half white, half whole wheat flour, only cinnamon instead of a mix, four large bananas and a tablespoon of vanilla instead of rum. The bread is flaky on the outside and moist on the inside. Sweet perfection in a pan.

March 12, 2013Ash is dairy-free and we use carob chips in our baking. I swear they are just as tasty and completely vegan. Plus, you can get them in bulk for quite cheap at Superstore : )
